Ingredients:
1 stick(8 tablespoons) unsalted butter
2 teaspoon powdered cardamom
1 teaspoon cinnamon
½ teaspoon allspice
½ teaspoon minced fresh ginger
⅓ cup light brown or turbinado sugar
1 cup all purpose flour
1 ½ teaspoon vanilla extract
Extra sugar for dusting
Instructions:
- In a small pan on the stove on low heat, heat the butter until lightly browned. Browning the butter creates a deeper, nutty flavor, which pairs well with the mix of spices.
- Once the butter is lightly browned, mix in the minced ginger, and continue to brown the butter until it has reached a dark caramel color. Turn off the heat.
- Add the cardamom, cinnamon, and allspice to the butter, and allow the spice mix to melt into the browned butter as the butter cools.
- Pour the browned butter mixture into a glass bowl or container, and allow it to cool in the fridge for around 5-10 minutes.
- While the butter is cooling, preheat the oven to 325°F. Line a tray or baking sheet with parchment paper.
- Once the browned butter mixture has cooled in the fridge, allowing for the flavors to further develop, mix the browned butter mixture and sugar together, until the sugar has completely dissolved into the butter mixture. Add the vanilla extract and mix until combined.
- Add flour, and mix thoroughly until you achieve a smooth, doughy consistency.
- Scoop the dough and roll into small spheres, placing each one roughly an inch apart on the baking tray. Each scoop should be roughly ¼ cup of dough. Press down on each sphere, flattening it slightly, as the dough will likely not spread much.
- Bake for 15-25 minutes, or until the inside of each bite is baked.
- Allow to cool, and enjoy! The bites are best when accompanied by a warm cup of tea.
